My Favourite Wedding Cake Design of 2026
People often ask me what my favourite wedding cake trend is, and my answer surprises them every time.
Pillars.
A few years ago, I never imagined I would be saying that. Like many wedding trends, pillars and separators have come full circle, but today’s designs are a far cry from the cakes of decades past.
If I were designing my dream wedding cake for 2026, it would be unapologetically tall, elegant and full of personality. Picture a towering 10 to 12-tier cake, with each tier a deep barrel shape creating incredible height and impact. Delicate Lambeth piping would add intricate detail throughout the design, softened with flowing bows, statement florals and carefully chosen decorative elements. Between selected tiers would be elegant pillars or acrylic or metal separators, creating space and allowing each section of the cake to shine in its own right.
One of the reasons I love pillars so much is that they create a sense of luxury and grandeur. They draw the eye upwards and make the cake feel almost architectural. Combined with modern separators, acrylic spacers or carefully designed stands, they create a centrepiece that commands attention without necessarily requiring hundreds of portions.
In fact, one of the biggest misconceptions in wedding cake design is that bigger always means more cake. Sometimesit’s the clever use of height, space and structure that creates the most breathtaking designs.


As much as I admire minimalist cakes, there is something wonderfully romantic about a wedding cake that embraces tradition while still feeling fresh and modern. Lambeth piping, bows, florals and pillars manage to do exactly that. For me, the perfect wedding cake should stop guests in their tracks when they walk into the room. It should spark conversation, complement the overall styling of the day and reflect the couple’s personality.
And if it happens to be 12 tiers tall with beautiful Lambeth piping and elegant pillars? Even better.


Cakes Inspired by Fashion, Fabric and Texture
One prediction I’m particularly excited about for 2027 is the increasing use of edible mediums to recreate the look and movement of different materials.
For years, wedding cakes have focused heavily on smooth finishes and clean lines. While those styles will always have their place, I think we’re about to see cake artists become much more experimental with texture and movement.
Using wafer paper, rice paper, chocolate, fondant, buttercream and other edible materials, cake artists can already create remarkable effects. In the coming years, I believe we’ll see these techniques pushed even further, with cakes inspired by fashion, textiles and interior design.
Imagine a cake that appears draped in flowing silk, wrapped in soft folds of fabric, covered in delicate lace or adorned with ruffles that seem to move as you walk around it. These effects aren’t created using real materials but through carefully crafted edible elements designed to mimic them.
As wedding dresses continue to feature dramatic textures, bows, corsetry, lace detailing and layered fabrics, I expect wedding cakes to follow suit. Cakes will increasingly become an extension of the overall wedding styling, taking inspiration directly from the bride’s gown, bridesmaids’ dresses or even the décor within the venue.
The beauty of these techniques is that they add drama and luxury without necessarily relying on size. A relatively simple three-tier cake can become a true showstopper through texture, movement and carefully considered detail. For me, this is one of the most exciting areas of cake design because it allows us to blur the lines between cake, fashion and art. I believe we’ll see much more of it in 2027 and beyond.
